As a general rule, the more complex the cooking, the more structured the wine. And as the fatty component of the dish increases, so should the tannin and structure of the wine.
Therefore, poultry cooked and seasoned in a simple way will go better with white wines with a certain structure and personality; it is better to avoid full-bodied red wine as it would end up overpowering the taste of the meat.
Leaner beef cuts are best paired with lighter red wines, while fatter beef cuts are best served with bolder red wines, richer in tannin. As the flavours become stronger, the meat will need a more full-bodied and flavoursome wine.
